An FD&C aluminum lake, or simply “lake,” is an insoluble material that imparts a powerful color by dispersing within various components of sweets and snacks.
Lake is well suited for our world of specialty treats because they deliver excellent light and heat stability while providing the ultimate in color uniformity.
They are oil-dispersible and can also be suspended in other carriers such as propylene-glycol, glycerin and more commonly sugar syrups.
